Fish knife

Also known as "fillet knife", a fish knife is a kitchen knife mainly made of inox and which has a thin and long blade that makes easier the fishbones separation. The fish knives - fillet knives are characterized by an unique blade flexibility which allows you to "follow" the central fishbone while cutting your fish without ruining its fragile flesh.

The salmon knife is also a fish knife but this one is merely made to essentially cut slices of salmon. It is characterized by an extended flexible blade and by honeycombed all around it thus making easy the air's penetration and which provides you the thinnest slices possible.
