The colander, with its large perforations, is used to quickly drain large volumes of solid foods. The chinois, with fine mesh or perforations and a conical shape, filters liquids and holds back particles to produce perfectly smooth sauces and stocks. The two tools are complementary in the kitchen.

Which mesh fineness should you choose?

For clear stocks and coulis, opt for a fine-mesh chinois or a cheesecloth-style strainer. For rinsing vegetables and draining pasta, a colander with wider perforations is enough and speeds up draining.

Which material lasts longest?
