The colander and chinois strainer are small kitchen utensils designed to drain foods such as pasta, vegetables, rice according to the principle of mechanical filtration, or to "strain" (i.e. filter) sauces, broths, jellies or tea. 

Available in various diameters and shapes, the colander and the chinois strainer can also be used to wash fruits and vegetables and thus accompany you in the success of your culinary preparations.

Why use a colander in the kitchen?

  • The colander is a utensil pierced with many holes which serves as a filter. It allows liquids to pass through by retaining food that is larger than the holes in the colander.
  • It is also used to wash, drain or cool food. It can be found in several materials such as bamboo, plastic or stainless steel. Nowadays, it is the stainless steel strainer that is preferred by professionals.

Why use the Chinois strainer ?

The chinois food strainer is an integral part of the cookware used by catering professionals. However, it is very easy to use. This kitchen utensil differs from the colander by its conical shape.

The two types of chinois strainers in the kitchen:

There are two types of Chinois strainers: traditional chinois strainer and cheesecloth.

  • Traditional chinois strainer : Similar to the colander, the traditional chinois strainer has a fine grid used to strain or filter sauces or tea. Its name probably comes from its Chinese hat shape which reminds us of the tea farmers who also used the "Chinese" strainer to filter the tea they were picking !  Also used to filter broths, fine creams, syrups, meat or fish sauces, the Chinois strainer is usually made of tinplate or stainless steel in order to make the kitchen equipment, often in contact with all kinds of liquids, more resistant. The kitchen chinois strainer is in fact the ideal small equipment to prepare your soups, to tread fish soup or to prepare your sauce bases possibly using a pestle or masher.
  • Cheesecloth : It should be known that the cheesecloth has a metal sieve, a grid meshed much "finer" than that of the traditional strainer. The cheesecloth is actually a loose fabric made of silk, thread, horsehair or metal that is used in cooking and dairy, especially for draining curdled milk for making cheese.  In professional cooking, the cheesecloth is more often used (for making stocks, smokes, sauces, custard, ...) than ordinary strainer (used for soups). The cheesecloth is more fragile and more delicate to use. It is well suited to those who want to make refined cuisine. Having a very fine mesh, it must be cleaned very carefully. As an alternative to cheesecloth, you can also choose a small strainer to filter your stocks and sauces.
