Which material for which use?
Stainless steel offers durability and easy care, aluminium provides good conductivity and reduced weight, while a non-stick coating makes cooking delicate preparations and cleaning easier.
What hob compatibility?
Check your heat source before buying: an induction stockpot has a ferromagnetic base suited to induction hobs, whereas an all hobs stockpot can be used on gas, electric, ceramic and induction alike.
Which diameter to choose?
The diameter determines the usable volume: a < 20 cm stockpot suits small quantities, a 20 to 30 cm stockpot covers everyday use, and a > 30 cm stockpot meets larger catering needs.
Stockpot, pan or pot?
The stockpot, wider than a pan and lower than a pot, is the ideal compromise for cooking in sauce and simmering. For braised dishes, consider a dutch oven instead.
