Oval cocotte

The oval cast-iron cocotte is the ideal shape for long cuts: roasts, poultry, whole fish or shanks. Its geometry fits pieces that would not sit in a round cocotte, while delivering the gentle braising and excellent heat retention typical of the cast-iron Dutch oven. An oval cocotte is measured along its longest dimension. Allow 23 to 27 cm for a chicken or a family roast, 29 cm and above for a large cut or a whole fish. The longer the cocotte, the heavier it is, so check that it stays easy to handle and fits your oven. Enamelled cast iron and care

Enamelled cast iron works on every heat source, induction included, and in the oven. The matte black interior of Staub models encourages searing and withstands long cooking. After use, hot water is enough; avoid sharp thermal shocks. The studded lid redistributes condensation over the food for tender results. Find the tinted versions in our Colored cocotte section.
