What makes the Staub flat studded lid stand out?
It is the brand's technical signature. During cooking, steam rises, condenses on the flat inner side of the lid, then drops back onto the food thanks to the evenly distributed interior studs. The result: continuous basting that keeps meat and vegetables moist, concentrates juices and limits drying out. This mechanism is why Staub cocottes are historically associated with stews, braises and bread baked in a pot.
Why is the Staub interior enamel textured matte black?
Where most competing cast iron cocottes are enamelled white on the inside, Staub chose a textured matte black enamel. This texture helps sear and brown food at high temperature, and handles high oven temperatures well. The black enamel also hides usage marks, keeping the cocotte's appearance close to new over time.
How do I care for a Staub enamelled cast iron cocotte?
For everyday cleaning, hand-wash with warm water and a non-abrasive sponge, then dry thoroughly to protect the unenamelled rim and prevent any oxidation marks. For baked-on residue, a soak in warm water usually does the job; avoid steel wool and harsh cleaners that would attack the enamel. Staub cocottes work on every heat source, including induction thanks to their ferromagnetic cast iron base.

For 1 to 2 people, a round 18 or 20 cm cocotte covers most uses. For 3 to 4 people, the 22 or 24 cm is the reference size. For 5 people and more, choose a 26 or 28 cm.
