What makes the Paderno Charlottes distinctive

The charlotte mould is a pastry classic: shape flaring upwards, flat bottom, to arrange ladyfinger biscuits in a cylinder and fill with a mousse or bavarois cream. The bavarois/diplomat mould has a similar shape for the same uses. The Paderno version is non-stick for clean turning-out.

Choosing within the Charlottes collection

Charlotte or bavarois/diplomat, what's the difference?

The charlotte is the entremets lined with ladyfinger biscuits arranged vertically inside the mould, with a mousse or bavarois in the centre, turned out and presented upright. The bavarois/diplomat is a mousse or set cream made in a mould, often without biscuits on the sides, turned out and glazed. The moulds can often serve both preparations.

Why Ø 18 cm?

18 cm is the reference size for 4-6 portion charlottes: generous enough for a shared dessert, manageable enough for individual portions. It also fits standard fridge spaces and serves easily on a flat dish.

How to turn out cleanly?

The non-stick coating makes turning-out easier. For charlottes, briefly dipping the outside of the mould in lukewarm water can help release the chilled mousse without damaging the biscuit decor. Hand-washing is recommended to preserve the coating.
