Choosing the right slicing knife
Which blade for which use?
A long blade, between 20 and 30 cm, allows a single-stroke cut for uniform slices. The blade's rigidity ensures control over roasts and large cuts, while a well-honed edge limits crushing of the meat. The slicing knife thus differs from the Ham knife, whose blade is generally more flexible.
How do you keep the edge sharp?
Regular honing with a steel keeps the edge aligned between stone sharpenings. Hand washing and immediate drying prevent corrosion and protect the handle. Find the selection of carving knives in the parent Meat knife section and the kitchen knife range.
