How do I succeed at preserving with Quattro Stagioni?
Sterilise jars and caps in boiling water. Fill while hot, leaving about 1 cm of headroom, screw the cap on immediately, then sterilise in a water bath (time depends on the recipe). As the jar cools, the cap dips slightly: this confirms a successful vacuum seal.
Are the caps reusable?
