What is the difference between a spider strainer and a classic skimmer?
A classic skimmer is a perforated disc with a few holes, used to remove foam or pieces from a broth. The spider strainer has fine mesh and a wide concave disc, designed specifically for frying: you lift a large quantity of fries at once, and the oil drains quickly. It is also used for Asian noodles and fritters.
Which diameter to choose?
The 20 cm suits a home fryer or a medium saucepan. The 28 cm is better for a professional fryer, a wide pot or a wok: its surface covers more product per lift, speeding up service. The handle stays long on both sizes for safety against oil splashes.
What is the nest mould for?
The nest mould consists of two ladles that nest together: you place very thin potato straws between them, plunge the assembly into the fryer, and obtain a crisp potato nest. These nests serve as a support for plated garnishes, poached eggs or salads in refined restaurant presentations.
How do you care for a spider strainer?
Hot soapy water is enough for most uses. For very greasy oils, prior soaking eases removal. Fine mesh sometimes traps residues: a soft brush helps dislodge them. Check the product sheet for dishwasher compatibility.
