Which tong for which use?

Sugar tongs are made for dining service (sugar bowl, coffee). Cake tongs are wider and flatter, to grip a slice of cake or a mille-feuille without deforming it. Ice tongs, longer and narrower, are for the bar. Acrylic ice tongs are dedicated to ice-cream display cases, where stainless steel would be less visible.

Stainless steel or acrylic for ice cream?

Stainless steel is dishwasher-safe and stands up better to intensive use — preferred for kitchen or bar service. Acrylic is more economical and does not alter the perception of the ice cream's flavour (no metallic mouthfeel), often preferred for buffets and ice-cream parlours.

18/10 stainless steel tongs are dishwasher-safe. The acrylic version is washed in lukewarm water: repeated hot cycles can dull the transparency and weaken the material over time.
