Pastry rings — Lacor

Collection distributed by AZ boutique ★★★★★ ★★★★★ 4,7/5

The Entremets ring collection by Lacor brings together 18/10 stainless steel rings dedicated to plating individual entremets and cold preparations. A range built in the professional pastry spirit that defines the Spanish manufacturer.

What makes the Entremets ring collection distinctive

Lacor entremets rings are made from 18/10 stainless steel, 3.5 cm high — a format dedicated to individual entremets, mousses, bavarois and tartares. The smooth, seamless inner wall makes demoulding easy and stands up to repeated chilling or freezing cycles.

  • 18/10 stainless steel, 3.5 cm high
  • Available diameters: 8 cm and 10 cm
  • For individual entremets, mousses, tartares and plate dressing

The most popular pieces in the Entremets ring collection

Two diameters make up the collection, covering the most common individual plating needs.

  • Entremets ring 18/10 stainless steel — 3.5 cm high — 10 cm diameter: AZ boutique best-seller, the standard individual plating size
  • Entremets ring 18/10 stainless steel — 3.5 cm high — 8 cm diameter: small size for amuse-bouches, canapés and compact plating

Choosing within the Entremets ring collection

What is an entremets ring used for?

An entremets ring is used to build a preparation directly on the plate or a tray: place the ring, fill it with successive layers (biscuit, mousse, insert), smooth, then lift the ring at plating. It produces a clean, sharp-edged presentation essential to pastry entremets work.

Which diameter to choose, 8 or 10 cm?

10 cm matches the classic individual format (single-portion entremets, bavarois, mousse). 8 cm is better suited to amuse-bouches, tartares and canapés. Many pastry chefs use both diameters to vary the formats within the same service.

How do you cleanly unmould an entremets?

To ease demoulding, briefly warm the outer wall with a kitchen torch or a hot cloth before lifting the ring. A strip of acetate film placed inside before assembly makes the operation even cleaner by preventing the mousse from sticking to the stainless steel.

Are these rings dishwasher-safe?

18/10 stainless steel handles the dishwasher without issue. Dry on removal to avoid water marks and preserve the polished finish. A manual wash in hot water remains ideal for daily care.
