Sponge cake pan

The coating: We all know the ultimate nightmare of all pastry chefs: the soft and melting cake that well risen but sticks when you try to unmold! There are sponge molds with non-stick coating that ensure easy and quick unmolding. And you will not even have to use baking paper or parchment paper. All you need to do is slightly butter your non-stick mold before filling it.

If you want to opt for durability, go for stainless steel which resists to corrosion, withstands extreme temperatures and is very easy to clean. Unlike other metals, stainless steel reflects the heat instead of absorbing it and is slightly adherent and the use of baking paper is recommended here. The stainless-steel molds must be used for the cooking of swiss rolls, because they brown slowly.

The shape: The sponge cake and the pastry frame, which are rectangular in shape, allow even baking of your cake because they allow a good heat transfer. The frame even when not non-stick also allows for a very fast release and is usually used with a carpet or baking paper.
