Infact there are two main reasons to use a wine carafe:

The first is to aerate a wine to promote the oxygenation of your beverage for a softer, flavorful taste! Oxygenate the wine to prevent a brutal tannic effect of young red wines and the highly noticeable alcohol that masks odors, then select a decanter with a very wide base and the widest neck possible, which will promote a maximum contact surface between the wine and the air. If you are receiving guests, think about aerating the wine about 2 hours before their arrival. Place your carafe in an ice bucket or a champagne bucket filled with ice if it is a white wine. You will find that the taste of your table wine will be different! It will be much more harmonious and without unpleasant odors!

 

The second is to decant an old red wine so that the impurities and sediment accumulated in the original wine bottle can be deposited in the bottom of your wine decanting carafe. But beware old vintages can often lose all their charm if they are over-oxygenated. The process is therefore to bring as little oxygen as possible to facilitate the separation between the deposits and the beverage. In short, for an old wine, it is necessary to decant while aerating the least possible. The carafe should have a rather narrow neck. When you pour the wine into the carafe, it must be done with great care unlike aeration that does not require special attention. It will be necessary to proceed to this operation at the last minute simply because once your vintage is poured into your wine glasses, it risks being "attacked" by the ambient air and will change very quickly in the nose as in mouth and risk. With proper decanting will enhance your wine tasting experience to the maximum.

Note that the decantating process is more profitable for old red wines because it brings almost nothing to white wines and even less to rosé wines. Moreover, among the wines not to be decanted; Sparkling wines that open just before consumption to keep their bubbles.
